It’s official…

I’m slowly but surely becoming a kitchen appliance junkie.

It’s to the point that I haven’t used my actual oven in about two months!

If you checked out my Instant Pot Buffalo Chicken Dip recipe, then you already know how I feel about my beloved Instant Pot.

However, this post is about a brand new appliance that my husband and I have been totally obsessed with – our air fryer!

If you don’t have one already, amazon has a huge variety of air fryers for every budget.

We splurged a little for ours and got this one.

From pizza to bacon wrapped mozzarella sticks, we’ve made so many yummy treats in our air fryer. 

Don’t worry, I’ll be sharing all of our favorite air fryer recipes on the blog, but today I’m going to share my Cinnamon Honey Glazed Air Fryer Sweet Potato Bites.

If you know me then you know that I LOVE sweet potatoes!

While I typically enjoyed them baked or in french fry form, I’ve now come to prefer them in all of their bite-sized glory.

While I’m sure you can achieve a similar result by roasting these in the oven, the air fryer cooks them perfectly every.single.time.

Crispy on the outside, soft and decadent on the inside!

That said, it was only right that I share this super easy, super quick recipe with y’all!

Aside from your Air Fryer, here’s what you’ll need to make these delicious sweet potato bites…

-Sweet Potatoes (duh)

-Olive Oil

-Honey

-Cinnamon

It’s best to use medium/large sweet potatoes for this recipe.

Once you’ve have your sweet potatoes, you want to wash and want to peel them.

Next, cut each potato into little potato disks.

My hubby and I found that by cutting them this way, they were 10x 2easier to cut into cubes(or bites).

You want to do this for each potato until they’re all diced.

Sweet potatoes can be really tough to cut through so I highly recommend using a very sharp, heavy duty knife.

Be careful not to cut yourself though!

Once you have diced all of your sweet potatoes, it’s then time to add the olive oil, honey, and cinnamon.

We used olive oil to make sure the sweet potatoes don’t stick together. 

It also helps get the outside of the sweet potato bites crispy and crunchy.

Next, sprinkle on some cinnamon and mix everything together until all of the sweet potatoes are evenly coated.

Now it’s time to get ready to pop them in the air fryer.

Since our air fryer is designed to look like a mini-oven, it comes with two racks that we used to spread out the sweet potatoes.

We ended up swapping out the racks midway through the cooking process to make sure that the sweet potatoes on the top rack didn’t get too crispy.

If your air fryer has a basket, no worries, just be sure that you don’t put too many sweet potatoes in at one time so that they can all cook evenly.

Once they’re done, let them cool a little and voilà!

The little bites are delicious and make the perfect side dish.

They also are great as a stand alone snack for toddlers and adults. My 2-year old loves them!

However, you want to be sure that you skip the honey if you plan to give these to littles that are younger than 1 year!

Feel free to add a dash of brown sugar to make them a bit more of a sweet treat!

Cinnamon Honey Glazed Air Fryer Sweet Potato Bites

Ingredients

  • 3 medium/large Sweet Potatoes
  • 1 tbsp Olive Oil Extra Virgin
  • 2 tbsp Raw Honey Local Honey If Possible
  • 2 tsp Cinnamon

Instructions

  • Wash and peel sweet potatoes and dice into even cubes.
  • In a large mixing bowl add oil, honey, and cinnamon and toss them until evenly coated.
  • Add sweet potatoes to air fryer and cook on 400 for 20-25 minutes. Depending on the size of your air fryer, you may have to split the sweet potatoes in half and cook one batch at a time.
  • Sweet potatoes should be crispy on the outside and soft on the inside once done.
  • Remove from air fryer and let the sweet potatoes rest for 5 minutes.
  • Serve and Enjoy

Notes

Add a dash of brown sugar to make the sweet potatoes even sweeter.
