Mini Pecan Pies

The holidays are here and I can’t wait to dig into all of my favorite holiday desserts. While I love the traditional holiday delicacies, I’ve been experimenting with new ways to make my favorites. As a result, these delicious Mini Pecan Pies were born! 

The thing about pie is that we almost always end up with a few slices that don’t get eaten. So I decided to attempt to bring together the best of both worlds and make mini pies! I top them with a French vanilla whipped cream and they are the perfect holiday treat!

They’re sweet, they’re delicious, and they’re perfect for the holidays. The best part? They’re mini! So if you’ve been searching for a holiday recipe to bring to the potluck this year, these Mini Pecan Pies are sure to be a crowd favorite.

Here’s what you need to make these Mini Pecan Pies with French Vanilla Whipped Cream: 

  • Refrigerated Pie Crust
  • Crushed Pecans
  • Plugra Butter 
  • Maple Syrup
  • Eggs
  • Brown Sugar
  • International Delight French Vanilla Creamer
  • Vanilla Extract
  • Heavy Whipping Cream
  • Powdered Sugar

Preparing The Dough 

To prepare the ‘crust’ of our mini pies, roll out your refrigerated pie crust, and using a cookie cutter or a glass, cut out 12 circles from the dough.

Spray a mini muffin tin with non-stick spray and add your dough circles to each muffin cup, gently pressing the dough down on the bottom.

Preparing the Filling

Creating the filling is as simple as combining the crushed pecans, maple syrup, eggs, brown sugar, vanilla extract, and butter and mixing well.

Be sure to grab your heavy whipping cream and International Delight creamer while you’re already in the dairy aisle.

Baking the Pies 

Once your filling is mixed well, spoon evenly into each mini pie crust.

Bake your mini pecan pies for 25 to 28 minutes or until pie crust is golden brown.

Creating French Vanilla Whipped Cream

While your mini pecan pies are baking, grab a mixing bowl to make the French vanilla whipped cream. The French Vanilla flavor adds a special, decadent touch to the mini pecan pies and is so simple to make.

Add in the heavy whipping cream, International Delight French Vanilla Creamer and powdered sugar to a bowl and blend until smooth.

Finishing the Pies

Once the mini pecan pies are done, carefully remove them from the oven and let them cool for 5-10 minute before removing them from the muffin tin.

To remove your mini pecan pies from the muffin tin, grab a spoon and gently loosen the perimeter of the pie crust. Then, carefully lift out of the muffin tin.

Place your mini pecan pies on a wire rack to cool. 

While you can simply spoon the whipped cream onto the pecan pies,you can also use an icing bag to make each of them look more uniform. To do this, simply transfer the whipped cream to a piping bag and add a tip of your choice. 

Once you’ve topped each of your mini pies with the whipped cream, sprinkle a bit of cinnamon on top and viola!

Mini Pecan Pies with French Vanilla Whipped Cream

Ingredients

Mini Pecan Pies

  • 1 cup Brown Sugar
  • 2 tbsp of Plugra Butter
  • 1/2 tsp of Cinnamon
  • 2 Eggs
  • ⅓ Cup Maple Syrup
  • 1 cup Pecans (chopped)
  • 1 Refrigerated Pie Crust
  • 1 tsp Vanilla Extract

French Vanilla Whipped Cream

  • ¾ Cup Heavy Cream
  • 2 Tbsp International Delight French Vanilla Creamer
  • ½ tsp Vanilla Extract

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit
  2. Roll out dough and using a small cookie cutter or a glass, cut out 12 circles from the dough.
  3. Spray a mini muffin tin with nonstick spray and add each dough circle to a muffin cup, pressing down on the bottom and up on the sides.
  4. To make the filling, in a large bowl combine brown sugar, Plugra Butter, cinnamon, eggs, maple syrup, and vanilla extract and mix well.
  5. Add in chopped pecans and combine.
  6. Spoon your pie mixture evenly into each individual muffin cup.
  7. Bake for 25-28 minutes or until pie crust is golden brown.
  8. To make the French Vanilla Whipped Cream, add in the heavy whipping cream, International Delight French Vanilla Creamer, powdered sugar, and vanilla extract to a bowl and blend with a hand blender until little peaks form.
  9. Once the mini pecan pies are done, carefully remove them from the oven and let them cool for 5-10 minutes before removing them from the muffin tin.
  10. Carefully lift out of the muffin tin and place pies on a wire rack to cool.
  11. Spoon or use an icing bag to top each mini pie with whipped cream.
  12. Sprinkle with cinnamon if desired.
