Here is what you need to make these delicious Chipotle Shrimp Bowls:

  • Minute Cilantro & Lime Jasmine Rice Cups
  • Shrimp (optional seasonings: cumin, garlic powder, onion powder, smoked paprika, black pepper)
  • Avocado
  • Roasted Corn
  • Diced Tomato 
  • Fully Cooked Black Beans
  • For The Chipotle Sauce (optional)
  • Chipotle Peppers
  • Lime 
  • Olive oil 
  • Honey
  • Sour Cream 
  • Salt & Pepper to taste

These shrimp bowls are the perfect easy weeknight meal and they reheat beautifully making them perfect for meal prep or for a quick lunch the next day!

I used cooked, medium peeled, and deveined tail-on shrimp for this recipe, but you are welcome to use raw shrimp if you’d like, although you may have to adjust the cooking time to ensure that your shrimp are fully cooked.

How To Prepare The Shrimp:

Once you have all of your ingredients, combine all of your seasonings, and drizzle olive oil onto the shrimp. Add the seasonings to the shrimp and gently toss until mixed well.

Once seasoned, drizzle a bit of olive oil in a hot skillet and heat for 3-5 minutes or until nice and brown on both sides. Remove from the heat and set aside.

How To Prepare The Chipotle Shrimp Bowls 

In your favorite bowl, add your cooked cilantro & lime jasmine rice to the bottom as the base of the bowl. Top with roasted corn, beans, diced tomato, diced avocado, and your shrimp. Drizzle a generous amount of the homemade chipotle sauce (optional), garnish with cilantro (optional), and enjoy!

How To Prepare The Homemade Chipotle Sauce:

While these chipotle shrimp bowls are absolutely delicious on their own, I love to add an easy homemade Chipotle Sauce to add an extra burst of flavor. To make the sauce, combine chipotle peppers, sour cream, olive oil, honey, fresh lime juice, salt, and pepper in a food processor. Blend for at least one minute or until smooth and creamy. For a thinner sauce, add 1-2 tablespoons of water until you reach your desired consistency.

Storage and Reheating Instructions:

To store the shrimp bowls, I recommend storing each ingredient separately in an airtight container to maintain freshness and avoid a soggy shrimp bowl. While the Minute Rice Cups reheat beautifully, for maximum flavor, I recommend heating a fresh rice cup before preparing your bowls. Store ingredients in the fridge for 2-3 days. I highly recommend using a glass container if possible, but no matter what container you use, make sure that it’s air-tight!

Thankfully this meal reheats extremely well and makes for a yummy lunch the next day! However, I highly recommend using a fresh Minute Rice Cup for your bowl for the most delicious flavor and quality.

Since the shrimp and other ingredients are already cooked you want to be careful not to overcook them. Simply add your desired portion size of each ingredient in a microwave-safe container, add 1-2 tsp of water and microwave for 1 minute up to 1:30.

Ingredients

  • Shrimp - 1lb
  • cumin -1tsp
  • garlic powder -1tsp
  • onion powder - 1tsp
  • Smoked paprika - .5tsp
  • Black Pepper -.5tsp
  • Avocado
  • Roasted Corn - 3/4 Cup
  • Cherry Tomato - 1/2 diced
  • Beans - 1/2 cup
  • Minute Cilantro & Lime Jasmine Rice Cups - 2

Chipotle Sauce

  • Chipotle Peppers 2-3
  • Lime - 1
  • Olive oil - 2tbsp
  • Honey - 1.5tbsp
  • Minced Garlic - 1tbsp
  • Sour Cream - 1/3
  • Salt & Pepper to taste

Instructions

  1. In a small dish combine cumin, garlic, garlic powder, onion powder, smoked paprika, and black pepper.
  2. Drizzle olive oil onto the shrimp and add the seasonings to the shrimp - gently toss until mixed well.
  3. Once seasoned, drizzle a bit of olive oil in a hot skillet and heat for 3-5 minutes or until nice and brown on both sides. Remove from the heat and set aside.
  4. To make the chipotle sauce, add chipotle peppers, juice of one lime, olive oil, honey, minced garlic, and sour cream to a food processor and mix for at least 1 minute or until well combined.
  5. Pour into a dish and salt & pepper to taste.
  6. In a bowl, add your cooked Minute Cilantro & Lime Jasmine Rice to the bottom as the base of the bowl. Top with roasted corn, beans, diced tomato, diced avocado, and your shrimp.
  7. Drizzle a generous amount of the homemade chipotle sauce (optional), garnish with cilantro (optional), and enjoy!

If the Chipotle Sauce becomes too thick, add 1-2 tbsp of water at a time until you reach your desired consistency.
