January has come and gone, but that doesn’t mean you have to put those health resolutions on the backburner! There are a ton of different, healthy ways to enjoy all of your favorites, and as always, I’m here to share some of my tried and true recipes to help you along the way.

So today I’m sharing an easy, delicious stuffed mushroom recipe that is both light and filling – and takes only a few minutes to make!

Stuffed mushrooms are such a versatile recipe, and I’ve snuck in a few extra veggies to make it just as healthy as it is delicious. The best part? They cook in the air fryer in less than 10 minutes – way quicker than the traditional 20+ minute cook time in the oven.

Here’s what you need to make these Easy Air Fryer Stuffed Mushrooms: 

  • Medium-sized Portabello Mushrooms
  • Sargento Aged Italian Blend Cheese
  • Cream Cheese 
  • Spinach
  • Mini Peppers (red, orange, and yellow were used for this recipe)
  • Butter
  • Worchestershire Sauce
  • Garlic Paste
  • Red Cooking Wing (optional)
  • Seasoning Mix (garlic powder, onion powder, paprika, salt, & pepper)
  • Fresh, chopped parsley (optional)

Preparing The Mushrooms

To prepare your portobello mushrooms to be stuffed, clean the mushrooms with a damp paper towel. You could also simply wash the mushrooms, but I’ve found that washing them leaves them pretty soggy, and makes it impossible to get that crispy texture. 

Once you’ve cleaned the mushrooms, remove the stems and set to the side – we’ll be using them for the filling.

Preparing the Filling

To create the mushroom filling, dice up spinach, mushroom stems, a mini red, yellow, and orange pepper, and set aside.

In a small skillet add a knob of butter until it simmers. Next add in your mushroom stems, peppers, worchestire sauce, and red cooking wine (optional) until mushroom stems and peppers are tender.

Once done, add to a small bowl and set aside.

In a small bowl, add cream cheese, the mushroom & pepper mixture, spinach, Sargento Aged Italian Blend Cheese, garlic paste, and seasoning mixture to a bowl and mix until well combined. I love using Sargento Cheese for many of my favorite recipes, but their reserve series is unmatched! Made with real, natural cheese, their Aged Italian Blend adds such rich flavor to these stuffed mushrooms!

In the dairy aisle, you can find Sargento Cheese, along with other traditional staples like milk, eggs, and even on-trend products like plant-based alternatives, in the dairy aisle!

Stuffing The Mushrooms 

Once your filling is mixed well, spoon evenly into each portobello mushroom. Top generously with Sargento Aged Italian Blend cheese.

Spray your air fryer basket with non-stick spray, add your mushrooms (be sure not to place them too closely together), and air fry on 375 degrees Fahrenheit for 7 minutes (checking halfway).

Once the stuffed mushrooms are done, carefully remove them from the air fryer (a spoon and tongs work best), and let them cool for 5-10 minutes.

Sprinkle with fresh, chopped parsley and enjoy!

Ingredients

  • 6 Medium-sized Portabello Mushrooms
  • 1 Cup Sargento Aged Italian Blend Cheese
  • 6oz Cream Cheese
  • ¼ Cup Spinach
  • 1 Mini Red Pepper (diced)
  • 1 Mini Yellow Pepper (diced)
  • 1 Mini Orange Pepper (diced)
  • 2tbsp Butter
  • ¼ cup Worchestershire Sauce
  • 1tbsp Garlic Paste
  • 2tbsp Red Cooking Wine
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp paprika
  • Salt & Pepper to taste
  • Fresh chopped parsley (optional)

Instructions

  1. Clean outside of mushrooms with damp paper towel and remove stems. Set aside

  8. Spray your air fryer basket with non-stick spray & add stuff mushrooms (be sure not to place them too closely together).
  9. Air fry at 375 degrees for 7 minutes.
