From pancakes to French toast and everything in between, I’ll be the first to admit that I love all things sweet when it comes to breakfast. However, sometimes I find myself craving more of a rich, savory breakfast to start my day. In my efforts to incorporate more fruits, veggies, and whole grains into my diet, these quick and easy savory breakfast bowls were born!

If you’ve been following along on the blog or over on Instagram then you know some of my favorite ‘bowls’ (like these Coconut Curry Chicken and Rice Bowls and these Chipotle Shrimp Bowls) were made with Minute Instant Rice!

Adding Minute Instant Rice & Quinoa to this Savory Breakfast Bowl is such an easy breakfast hack and is also a great way to get my daily serving of whole grains in at the beginning of the day!

Here is what you need to make these quick and easy Savory Breakfast Bowls:

  • Eggs
  • Ground Sausage
  • Diced Red Bell Pepper
  • Argula
  • Everything Bagel Seasoning

These Savory Breakfast Bowls are full of flavor and also one of my signature 5 ingredients or less breakfast recipes so they definitely deserve a spot in your breakfast lineup!

How To Prepare The Minute Instant Rice & Quinoa:

One of the things that I love about this recipe is that you can prepare the entire bowl in a little over 10 minutes – which is just enough time to cook our Minute Instant Rice & Quinoa! It’s a delicious blend of brown, red, and wild rice with quinoa, and has a nutty flavor that really enhances these savory breakfast bowls.

Simply take one of the pre-portioned bags and cook according to the package instructions. Each bag makes enough for two servings, making it easy to make a bowl for now and one for later!

Once done, remove from the heat, fluff with a fork, and set aside.

How To Prepare the sausage, peppers, and eggs:

While the Minute Instant Rice & Quinoa is cooking, heat a skillet over medium heat and cook the sausage in a large skillet until browned. Drain the sausage and set aside. I used regular ground pork sausage for this recipe, but you can use chicken sausage, turkey sausage, links, or any other variety that you prefer.

In the same skillet, drizzle in a bit of olive oil and cook your red bell peppers until softened and set aside.

For the eggs, I decided to use boiled eggs, but you can always switch it up and prepare your eggs over easy or even scrambled with a bit of cheese! 

How To Prepare these Savory Breakfast Bowls:

Once all of your ingredients are cooked, grab your favorite bowl and add in the Minute Instant Rice & Quinoa as the base.

Next top with the ground sausage, peppers, your eggs, and a bit of arugula. Sprinkle with Everything Bagel seasoning and your savory breakfast bowls are ready to enjoy!

Storage and Reheating Instructions:

Although these bowls are best when enjoyed immediately after preparing, it is possible to successfully store them for a later time. To maintain the freshness of the ingredients and to prevent sogginess, it’s best to store each component of these breakfast bowls separately. That way you can easily assemble a fresh bowl whenever you are ready to enjoy this easy breakfast.

You could also utilize a meal prep container that has multiple compartments to store the red pepper, sausage, and Minute Instant Rice & Quinoa. Unless the eggs are boiled prior to preparing these bowls, it’s best to prepare them fresh. Similarly, it’s best to store the arugula separately from other ingredients to ensure that it stays crisp.

You can safely store the ingredients in the fridge for 2-3 days for optimal freshness! I highly recommend using a glass container if possible, but no matter what container you use, make sure that it is air-tight!

Thankfully the ingredients that make up this savory breakfast bowl reheat extremely well and make for a yummy breakfast the next day! However, I highly recommend preparing a fresh serving of eggs for your bowl to ensure the most delicious flavor and quality.

When reheating the Minute Instant Rice & Quinoa, add a tiny amount of water, about 1 tbsp or so, or cover the container with a damp paper towel to help prevent the rice & quinoa from drying out during reheating. Microwave at 20 second intervals stirring in between until it reaches your desired temperature. 

Reheat the sausage and peppers separately in the microwave for 20-25 second intervals until they reach your desired temperature and add them to the bowl. Unless boiled, I highly recommend preparing fresh eggs while reheating your other ingredients.

Next add your fresh arugula and a bit of the Everything Bagel seasoning and enjoy!

Remember to use microwave-safe containers, and keep a close eye when reheating to prevent overcooking or drying out the ingredients.

Ingredients

  • 1 Bag Minute Instant Rice & Quinoa
  • 2 Boiled Eggs
  • ½ Red Bell Pepper (Diced)
  • 4 oz Ground Sausage (cooked & crumbled)
  • Handful of fresh Arugula
  • 1 tbsp Olive Oil
  • 1 tsp Everything Bagel Seasoning (optional)

Instructions

  1. In a medium pot, bring 1 cup of water to a boil and add in the contents of one bag of Minute Instant Rice & Quinoa. Reduce heat, cover and simmer for 10 minutes. Once done, fluff with a fork and set aside.
  2. In a large skillet, add in the ground sausage and cook until golden brown. Remove from heat, drain sausage, and set aside.
  3. Add a tbsp of olive oil to the same skillet and add in your diced red bell pepper. Saute until softened.
  4. In a bowl, add the cooked Minute Instant Rice & Quinoa as the base.
  5. Next top with the ground sausage, peppers, eggs, and arugula.
  6. Sprinkle with Everything Bagel seasoning.
  7. Enjoy!
