How To Prepare the Pineapple Boats:
To get the ‘boats’ for our pineapple boats, take one pineapple and cut in half from top to bottom (stem to base). Next, take each half of the pineapple and make slices inside of the fruit to form small cubes of pineapple that you can then scoop out with a spoon and save for late. Once you have removed all of the pineapple cubes, continue to hollow out the pineapple with a spoon.
Be sure to reserve some of the pineapple juice for the ginger honey sauce and set you hollowed out pineapple ‘boats’ to the side.
How To Prepare The Minute Instant Jasmine Rice:
The best thing about this recipe, other than the fact that it is absolutely delicious, is that it all comes together in no time! Once the pineapple’s have been hollowed out, I like to go ahead and prepare the Minute Instant Jasmine Rice. One of my favorite things about the Minute Instant Jasmine Rice is that it can be prepared either on the stovetop or in the microwave.
Simply measure out your desired serving of rice (I used 2 cups for this recipe), and prepare according to the package instructions. Since it takes only 5 minutes to prepare, the rice will be ready even before the chicken is done cooking!
Once done, remove rice from heat and fluff with a fork.
How To Prepare The Ginger Honey Chicken:
Cut boneless, skinless chicken breast into bit sized cubes and season with salt, pepper, garlic salt, and paprika. Add in cornstarch and mix well to ensure that all pieces of chicken are evenly coated and set aside.
In a small bowl, mix honey, soy sauce, minced garlic, freshly grated ginger, and pineapple juice until well combined and set aside.
Heat a skillet over medium heat and add in a drizzle of olive oil. Add the chicken to the skillet and cook until bowed. remove the chicken from the skillet and add the honey ginger and allow to cook for a few seconds – stirring consistently to avoid sticking. Add the cooked chicken back into the skillet, turn down the heat to a simmer and stir until the chicken is coated.
How To Assemble The Pineapple Boats:
Take your hollowed out pineapples and fill one half with the ginger honey chicken and fill the other half of the pineapple boat with one cup of the Jasmine Rice.
Garnish with sesame seeds and enjoy!

Ingredients
- Minute Instant Jasmine Rice
- 1 Pineapple (or 2 for 4 boats)
- 4-6 Boneless, Skinless Chicken Thighs (cut into small pieces)
- 3 tbsp Olive Oil
- ½ tsp salt
- ½ tsp pepper
- ½ tsp paprika
- ½ tsp garlic powder
- 1 tsp Cornstarch
- 2.5 tbsp Honey
- 2.5 tbsp Soy Sauce
- 1 tbsp Ginger (freshly grated)
- 1 tbsp Garlic (freshly grated or minced)
- 1 tbsp Pineapple Juice
- Sesame Seeds (optional, for garnish)
- Parsley (optional, for garnish)
Instructions
- Take one pineapple and cut in half from top to bottom (stem to base). Next, take each half of the pineapple and make slices inside of the fruit vertically and horizontally to form small cubes of pineapple that you can then scoop out with a spoon and save for later.
- In a large bowl, add 1 tbsp of olive oil to your chicken thighs. Add your salt, pepper, paprika, garlic powder, and cornstarch. Toss to coat, and set aside.
- In a small bowl, combine honey, soy sauce, ginger, garlic, and pineapple juice and mix well and set aside.
- In a large skillet, add 2 tbsp of olive oil and add in your diced chicken and saute until golden brown.
- Add in your ginger honey sauce and cook for about 1-2 minutes or until chicken is coated and sauce becomes sticky.
- Once your chicken is done, remove from heat and set aside.
- Prepare your Minute Instant Jasmine Rice according to the package instructions.
- Once done, fluff it with a fork and season to your liking.
- Add your desired serving of ginger honey chicken into one half of the hollowed pineapple and add your desired serving of Minute Instant Jasmine Rice into the other half.
- Garnish with sesame seeds and parsley.
- Enjoy!
