Once you have all of your ingredients measured out and ready to go, the first step is to prep your crock pot with a crock pot liner. Trust me, this will save you SO much time on the backend when it’s time to clean. Definitely a game-changer for any crockpot recipe.

Preparing the Slow Cooker Pot Roast

To start, prepare your roast by cleaning and drying it as much as possible. Ensuring that it is completely dry makes it easy for the seasonings to truly be absorbed into the meat and makes it easier to get the perfect sear. Once you’ve dried your roast, place it on a cutting board and add the oil, salt, pepper, rosemary, onion powder, garlic powder, and Worcestershire sauce to the pot roast.

Using your hands, work the oil and seasonings into the pot roast until it is fully coated with the marinade. Once coated, sear your roast for 2-3 minutes on both sides and add into your crock pot.

Next, pour in your beef broth, gravy mix, ranch seasoning, and butter and cook on high for 6 hours or on low for 8 hours.

While your roast is cooking, grab your baby carrots, chop up red potatoes, dice an onion, and set aside. When there are about 2 hours of cooking time left, add in your veggies, cover, and continue to cook.

When there is about 45mins to an hour of cooking time left, remove the lid and using a fork, begin to separate the roast and mix it together with the veggies. Take note of the consistency of the gravy.

If you desire to thicken your gravy, create an easy cornstarch slurry by mixing 1 tablespoon of cornstarch (you can also substitute flour), and 2 tablespoons of water and mix until well combined.

Add the mixture to the crock pot, stir, and recover for the remaining cooking time.

PRO TIP: use a cornstarch slurry to thicken up your gravy.

Once done, set your crockpot to warm and serve over homemade mashed potatoes or with cornbread and enjoy!
