Made my delicious slow cooker oxtails with gravy? If so, then you know many times oxtails come with a lot of leftovers, and a great way to put a unique spin on those leftovers is to whip up some easy oxtail grilled cheese sandwiches.

Grilled cheese sandwiches are easily one of the most versatile meals that you can make. So when my hubby who isn’t even the biggest fan of grilled cheese suggested that we try to whip up some oxtail grilled cheese sandwiches, I knew we had to give it a try! Needless to say, these did NOT disappoint and they honestly turned out better than we were expecting!

While it isn’t one of my 5 ingredients or less recipes, it’s totally worth the extra time and ingredients to get these hearty grilled cheese sandwiches.

So without further ado, here is what you need to make these delicious Oxtail Grilled Cheese Sandwiches:

  • Oxtails
  • Beef Broth
  • Tomato Paste
  • Mayo
  • Parmesan Cheese (shredded)
  • Baby Swiss (slices)
  • Mild Cheddar (slices)
  • Ciabatta Buns

Once you have all of your ingredients measured out and ready to go, the first step is to prep your crock pot with a crock pot liner. Trust me, this will save you SO much time on the backend when it’s time to clean. Definitely a game-changer for any crockpot recipe.

Preparing the Oxtails

To start, prepare your oxtails by cleaning and drying them as much as possible. Then heat a skillet (cast iron works best but any skillet will do) over medium/high heat. Add a bit of oil to the skillet and sear all sides of your oxtails until they are nice and brown all around.

We opted not to go heavy on the seasonings since we prepared these oxtails specifically for the grilled cheese, however, you can definitely season them using the seasonings listed here! Once you’ve seared them, add them to the crock pot with beef broth and tomato paste and cook on high for 4 hours.

Preparing the Oxtail Grilled Cheese Sandwiches

Once the oxtails are done, allow them to cool for 5-10 minutes and remove the meat from the bones, and set aside.

Next, grab your cheeses, mayo, and ciabatta buns. We decided to use baby Swiss and mild cheddar for our grilled cheese sandwiches but you can use any cheese that you like. Next, combine mayo and shredded parmesan cheese and set aside. This is what we will use to create a parmesan crust on our grilled cheese sandwiches.

Then carefully cut each of your ciabatta buns in half and set aside.

Spread your parmesan mayo mixture on the outside of each ciabatta bun. Then heat a large skillet over medium/high heat, once hot place the ciabatta bun with the mayo parmesan mixture facing down. While cooking, add 1 slice of cheddar, 1 slice of baby Swiss cheese and top with a spoonful or two of oxtails. Top with an additional slice of cheddar and baby Swiss and place the other half of the ciabatta bun on top.

Cook for 1-2 minutes and flip the sandwich so that the other half of the ciabatta bread can cook until golden brown (about 1-2 minutes).

Remove from the skillet and allow to cool while you cook the other grilled cheese sandwiches. Once cooled, cut the sandwich down the middle (or diagonally) and enjoy!

Ingredients

  • Oxtails - 1.5lbs
  • Beef Broth - 32oz
  • Tomato Paste - 2tbsp
  • Mayo - 1/4th Cup
  • Parmesan Cheese (shredded) - 1/4th Cup
  • Baby Swiss - 8 slices
  • Mild Cheddar - 8 slices
  • Ciabatta Buns - 4 buns

Instructions

  1. Clean and dry your oxtails.
  2. Then heat a skillet (cast iron works best but any skillet will do) over medium/high heat. Add a bit of oil to the skillet and sear all sides of your oxtails until they are nice and brown all around.

  14. Repeat steps 9-13 until you've cooked all of the grilled cheese sandwiches.
  15. Once cooled, cut the sandwich down the middle (or diagonally).
  16. Enjoy!
