Cool, crisp weather is here and that means it’s time to enjoy our favorite comfort foods! I love enjoying warm, hearty meals during the cooler months and this delicious Catfish Jambalaya is a must!

 It’s perfect for an easy, make-ahead dinner and the leftovers taste just as delicious making it perfect for lunch the next day! I personally love to enjoy it with some freshly baked cornbread but it’s absolutely delicious and filling on its own!

Here in Alabama, we eat Jambalaya year-round, however, the autumn and winter months are my personal favorite time to enjoy this flavorful dish! Since catfish has a consistently mild, yet sweet flavor, they are a perfect substitute for the chicken and/or shrimp in traditional jambalaya.

So without further ado, here is what you need to make this delicious Catfish Jambalaya with U.S. Farm-Raised Catfish Filets:

  • U.S. Farm-Raised Catfish Filets 
  • Smoked Sausage
  • Butter
  • White Onion
  • Garlic
  • Celery
  • Bellpepper
  • Diced Tomatoes
  • Chicken Broth
  • Garlic Powder
  • Chili Powder
  • Salt
  • Pepper
  • Cajun Seasoning
  • Worcestershire Sauce
  • White Rice

Once you have all of your ingredients, chop up your veggies, sausage (I also like to remove the casing), and catfish and set aside. The prep for this recipe is the hardest part since this Catfish Jambalaya can be made all in one large pot.

To start making your Jambalaya, melt butter in your pan at med/high heat and once it begins to bubble up, add in your smoked sausage and cook for about about 5 minutes or until browned. Once done, remove your smoked sausage and set aside.

Next add in your celery, onion, garlic, and bell pepper, and cook for about 5 minutes. Next add in diced tomatoes, chicken broth, salt, pepper, cajun seasoning, and Worcestershire sauce and stir until well combined.

Next, add in your catfish and allow them to cook for 5 minutes or until the catfish is no longer transparent. Catfish is such a versatile ingredient and its flaky texture makes it perfect for this dish! Once your catfish has cooked for a bit, add in your white rice, stir, and cover. Cook covered for 20 minutes until rice is fully cooked.

Once done, remove from heat, top with fresh parsley, and allow to cool for 5-10 minutes. Serve with freshly baked cornbread or enjoy it on its own!

Catfish Jambalya made with U.S. Farm-Raised Catfish Filets

Ingredients

  • 2 U.S. Farm-Raised Catfish Filets (chopped into small pieces)
  • 1lb Smoked Sausage (chopped)
  • 4tbsp Butter
  • 1 medium White Onion (diced)
  • 2 cloves Garlic (minced)
  • 2 stalks Celery (chopped)
  • 1 Bellpepper (diced)
  • 1 can (oz) Diced tomatoes
  • 32oz Chicken broth
  • 1 tsp chili powder
  • ½ tsp salt
  • ½ tsp pepper
  • 1tsp Cajun Seasoning
  • 1tbsp Worcestershire sauce
  • 2 cups White Rice

Instructions

  1. In a large pot, add butter over medium/high heat and add in the smoked sausage.
  2. Cook smoked sausage for 4-6 minutes. Once done remove from pot and set aside
  3. Add celery, bell pepper, minced garlic & onion to the pot and cook for 5 minutes or until the vegetables begin to soften.
  4. Add in your diced tomatoes, chili powder, salt, pepper, cajun seasoning, and Worcestershire sauce, and stir.
  5. Pour in chicken broth and add the U.S. Farm-Raised Catfish and cook for 4-6 minutes.
  6. Pour in rice and stir until well combined.
  7. Cover pot and cook covered for 20 minutes or until rice is fully cooked.
  8. Once done, remove from heat, top with fresh parsley, and allow to cool for 5-10 minutes.
  9. Enjoy!
