Mashed potatoes are one of those side dishes that go with literally anything! Not to mention, they are one of the few sides that we actually can convince our little ones to eat.

Whenever possible, we like to make mashed potatoes from scratch, and although it takes a bit more time to prepare than its instant counterparts, the flavor is unmatched!

In my family we love cheese and we love garlic so when my hubby made these easy, cheesy garlic mashed potatoes for the first time, I told him that we had to put it on the blog!

While this isn’t one of my signature 5 ingredients or less recipes, it’s totally worth the extra ingredients to really bring out the flavor of these creamy, cheesy garlic mashed potatoes!

These mashed potatoes can be made in less than 20 minutes and make the perfect side for just about any meal (especially these hot honey chicken thighs)!

How To Prepare The Mashed Potatoes:

Once you have all of your ingredients, the first thing to do is preheat your oven to 350 degrees Fahrenheit. Next, it’s time to peel and dice your potatoes! You can totally leave the skin on too if you prefer. Just be sure to wash your potatoes well. Next, it’s time to boil your potatoes!

One of our favorite ways to sneak in a little extra flavor to a dish is to use broth when boiling is required. That said, for these mashed potatoes, we will be boiling them in a mixture of chicken broth and water to infuse some extra flavor into the potatoes.

Once the potatoes are done boiling, you can hand mash them, or pop them into a food processor until you get your desired texture. While hand mashing (or while they are in the food processor), add heavy whipping cream, garlic paste, salt, and pepper. You can make them as smooth (or as lumpy) as you would like, but we find the food processor makes it extremely easy to achieve the texture we like, without all the extra muscle.

PRO TIP: Instead of hand mashing, use a food processor to achieve the desired texture of your mashed potatoes.

Once you’ve achieved your desired texture, pour your mashed potatoes into your favorite baking dish and top with shredded cheese. We used a triple cheddar blend from Tillamook which contained medium white, sharp, and medium cheddar cheese.

Once your cheese is added, cover your mashed potatoes and place them in the oven for 20 minutes. Remove the cover and bake uncovered for an additional 10 minutes.

Once done, remove your mashed potatoes from the oven and sprinkle them with chives and/or parsley for a final touch!

To store the mashed potatoes, allow them to cool completely and place them in an airtight container & store them in the fridge for 3-5 days. I highly recommend using a glass container if possible, but no matter what container you use, make sure that it’s air-tight!

Yes! Mashed potatoes freeze quite well! Simply allow your mashed potatoes to cool completely and add them to a freezer-safe ziplock bag or freezer-safe container. You can freeze these potatoes for up to three months!

You can reheat these mashed potatoes pretty easily! One option is to remove your mashed potatoes from the fridge and place them into an oven-safe baking dish. Heat them in the oven at 375 degrees for 15-20 minutes or until warm all the way through.

You could also heat a smaller serving size in the microwave. Place the desired amount of mashed potatoes on a microwave-safe dish, add 1-2 tbsp of water, and stir. Heat for 1min to 1:15sec until warm all the way through.

Ingredients

  • Red Potatoes - 3lbs
  • Heavy Whipping Cream - 1 1/2 cups
  • Garlic Paste - 4tbsp
  • Salt - 1-2tsp (to taste)
  • Pepper - 1-2tsp (to taste)
  • Shredded Cheddar Cheese Blend - 2 cups
  • Chicken Broth - 2 Cups
  • Water - 4 Cups

Instructions

  1. Preheat your oven to 350 degrees Farheinheight.
  2. Dice and peel your potatoes.
  3. Add water and chicken broth to a large pot and bring to a boil.
  4. Add your potatoes and boil for 15 minutes.
  5. Once done, remove from water and drain well.
  6. In a bowl (or food processor), add your potatoes, salt, pepper, garlic paste, and heavy whipping cream, and mash until you reach your desired texture.
  7. Transfer potatoes to a 9x13 baking dish and top with shredded cheese.
  8. Cover and bake mashed potatoes for 20 minutes
  9. Remove the cover and bake for an additional 10 minutes
  10. Remove from oven and top with chives and/or parsley
  11. Enjoy
