The flavors are rich and the chicken tastes as if it came right off of the grill! If you’re a busy mom like me, then you know the easier the dinner recipe, the better, and this one does not disappoint!

While this isn’t one of my signature 5 ingredients or less recipes, it is totally worth the extra ingredients! Besides, once seasoned, using an air fryer allows for a hands-free approach which equals less mess in the kitchen!

This cilantro lime chicken is the perfect easy weeknight meal and they reheat beautifully for a quick lunch the next day!

We used chicken thighs for this recipe, but you are welcome to use any type of chicken you’d like, although you may have to adjust the cooking time depending on the size and thickness of the chicken.

How To Prepare The Chicken:

Once you have all of your ingredients, combine all of your seasonings, add the juice of one lime, and combine. Brush (or rub) your chicken with oil and season each piece with the seasoning mixture.

PRO TIP: be sure to season both sides of your chicken and under the skin for maximum flavor.

Once seasoned, pop your chicken into the air fryer with the skin side down and the air fryer at 400 degrees for 10 minutes. By starting with the skin side down first, you are able to ensure that your chicken cooks all the way through and that your skin gets crispy without becoming burnt. At the 10-minute mark, flip your chicken over and cook for an additional 5 minutes.

While the chicken continues to cook, add the juice from another lime and chopped cilantro and air fry for another 3-5 minutes.

To store the cilantro lime chicken, place them in an airtight container & store them in the fridge for 2-3 days. I highly recommend using a glass container if possible, but no matter what container you use, make sure that it’s air-tight!

How do I reheat cilantro lime chicken?

Thankfully this cilantro lime chicken reheats extremely well and makes for a yummy lunch the next day! However, you may want to add a bit more lime juice once they are completely reheated.

Simply preheat your oven to 350 and place them on a foil-lined baking sheet and bake for 10-12 minutes or until completely warmed through. You could also reheat your chicken in the microwave! On a microwave-safe plate, heat 1 piece of chicken for 1:30 sec or up to 2 minutes.

Can I substitute a different type of chicken for this recipe?

You can totally substitute a different cut of chicken for this cilantro lime chicken recipe. Chicken breast cut into strips or nuggets cook great in the air fryer. You can also use chicken tenderloins. I’m also pretty sure it would be absolutely delicious on chicken wings! Just be sure to adjust your cooking time to accommodate the size and thickness of your chicken.

Ingredients

  • Chicken Thighs - 4
  • Lime - 2
  • Cilantro -1.5tbsp
  • Oil -2tsp
  • Salt- .5tsp
  • Pepper- .5tsp
  • Minced Garlic - 1/4tsp
  • Onion Powder- .5tsp
  • Garlic Powder- .5tsp
  • Paprika- .5tsp
  • Parsley- .5tsp
  • Lime - .5tsp

Instructions

  1. In a large bowl, fully coat the chicken with oil.
  2. Combine salt, pepper, minced garlic, onion powder, garlic powder, paprika, lime juice from one lime, 1tbsp of cilantro, and parsley.
  3. Generously season both sides of the chicken making sure to also season under the skin.
  4. Place in the air fryer skin side down at 400 for 10 minutes.
  5. At the 10-minute mark, flip the chicken skin side up and continue to cook in the air fryer for an additional five minutes.
  6. While the chicken is cooking, combine the juice of one lime and the chopped cilantro.
  7. At the 5-minute mark, brush the cilantro-lime mixture onto the chicken and air fry for an additional 3-5 minutes.
  8. Once your chicken has finished cooking, top with fresh cilantro.
  9. Enjoy!
