Lemon Bars are one of the easiest recipes to make and perfect for the beautiful Spring weather that we’ve been having here in the South. If you’ve read my post about how to eat more seasonally, then you know I’ve been looking for easy, and delicious ways to enjoy more fresh fruit. And what better fresh fruit to use for a dessert during this season than lemons?

If you’ve had homemade lemon bars before then you know they can be a bit finicky to make, but not these! They’re perfect every.single.time. The lemon filling is light, fresh, and free of additives and the crust is delicious and crumbly!

Here’s What You Need To Make This Easy Lemon Bars Recipe

Lemons

Granulated Sugar

Butter

Confectioner’s Sugar

Vanilla Extract

Flour

Eggs

This easy lemon bars recipe is the perfect combination of sweet and tart with a delicious crust on the bottom!

While this isn’t one of my 5 ingredients or less recipes, it can be made using items that you likely already have in your fridge or pantry. Although it takes less than an hr to make these Lemon Bars, they will have to cool/chill for up to 2.5 hours so that the lemon topping can settle.

Before you make the delicious crust, be sure to preheat your oven to 350 degrees Fahrenheit and line your baking sheet with parchment paper. I’ve seen some websites suggest foil but parchment paper will ensure that the Lemon bars don’t stick to your pan. Trust me on this…I learned the hard way.

Next combine the butter, confectioner’s sugar, flour, and vanilla extract using a food processor.

Pulse until you achieve a crumbly consistency. Next, pour the mixture onto your lined parchment paper pan and press down until you get an even ‘base’ for your crust.

Pop your crust into the oven for 20 minutes and while it is cooking, go ahead and prepare the lemon topping.

Zest and juice your lemons and set aside. In a large bowl beat your eggs until well combined, then add in your lemon juice, zest, granulated sugar, and flour, and mix until well combined.

Pour the mixture over the crust and immediately place it back into the oven for 35-38 minutes.

Once done, remove from oven and let cool in pan completely. Next, refrigerate for at least two hours before serving.

To serve, I like to top it with powdered sugar and cut them into square bars.

Ingredients

Crust

  • 2 Cups Flour
  • 2 Sticks of Butter (softned & cut into cubes)
  • 1 Cup Powdered Sugar
  • 1 tbsp Vanilla Extract

Lemon Topping

  • 1 Cup Lemon Juice
  • 6 Eggs
  • 1 Cup Flour
  • 2.5 Cups Granulated Sugar

Instructions

To make the Crust:

1. Preheat oven to 375 degrees.

2. Line a 13x9 baking pan with parchment paper and set aside.

3. In a food processor combine butter, powdered sugar, & vanilla extract and pulse until well combined.

4. Next, add 2 cups of flour to the mixture and combine until you achieve a crumb-like texture.

5. Pour mixture into the parchment lined baking pan and pat down until you get an even layer on the bottom.

6. Place baking pan in over for 20 minutes. Once done, remove from oven and set aside.

To Make Lemon Topping:

1. To make the lemon topping, add eggs into a bowl and whisk until combined.

2. Next add lemon juice and sugar to egg mixture and whisk until combined.

3. Add remaining flour to lemon/sugar/egg mixture and whisk until well combined.

4. Pour lemon mixture on top of crust and place immediately in oven for 30-35 minutes.

5. Once done remove from oven and let cool completely.

6. Once cooled, refrigerate for at least 2 hours before serving.

7. When ready to serve, remove from fridge and top with addition powdered sugar, cut into bars, and enjoy!
