Pumpkin Spice Muffins
These 5-Ingredient Pumpkin Spice Muffins are delicious, full of flavor, and super easy to make – the perfect treat to enjoy this Fall!
Believe it or not (if you know me you believe it), but I’ve never had a Pumpkin Spice Latte. If you’re new here, I’m Kermilia and I’m one of the few mamas out there that don’t drink coffee.
Coffee just isn’t my thing, never has been. However, with Fall officially here and temperatures dropping, I have to admit, I was struggling with a bit of FOMO when it came to the whole PSL movement.
Since I won’t be hopping on the PSL train any time soon, I decided to do the next best thing, and whipped up these delicious Pumpkin Spice Muffins with white chocolate chips!
And y’all…
They are delicious!
They’re the perfect combination of sweet with just the right amount of spice and let’s face it, you can’t go wrong with chocolate!
Besides the fact that they are absolutely delicious, the best thing about these White Chocolate Chip Pumpkin Spice Muffins is that they only require 5 ingredients to make!
If you’ve checked out my Cake Mix Christmas Cookies or my Instant Pot Baby Back Ribs, then you know that I’m all about super simple recipes that are easy to make and packed with flavor -and these muffins do NOT disappoint!
Besides, wouldn’t you love a delicious Pumpkin Spice muffin to go with that Pumpkin Spice Latte?
Here’s what you need to make these delicious Pumpkin Spice Muffins:
-Spice Cake Mix
-Pumpkin Purée
-Almond Milk
-Vanilla Extract
-White Chocolate Chips
For these muffins, I decided to use a boxed spice cake mix for two reasons:
-I didn’t want to make them from scratch (but you totally can if that’s your thing!).
-The boxed spice cake mix gives these muffins a delicious, cake-like texture that I love!
Since the spice mix already has all of the flour and spices, to make these pumpkin spice muffins, I added a can of 100% pumpkin Purée (Libby’s brand).
You want to be sure that when you buy the pumpkin puree, that you don’t get the pumpkin pie mix since they look identical. Or, you could make your own pumpkin puree from one of the many pumpkins that I KNOW you have around the house (it’s not just me…right?).
In a large mixing bowl, combine the spice cake mix, pumpkin purée, vanilla extract, almond milk until you get a semi-thick, but smooth texture.
Once all of your ingredients are mixed well, add in your white chocolate chips and fold them into the batter.
Next, grab your muffin pan, spray with a non-stick spray (or you can use cupcake liners), and add your batter to the pan. I personally use a jumbo muffin pan but any size will work!
Next, top with a few more white chocolate chips, and get ready to pop these bad boys in the oven!
Be sure your oven is pre-heated to 350 degrees F, and once heated, pop your muffins in and bake for 25-28 mins.
Your baking time may vary depending on your oven and the size of your muffin tin, so be sure to take a toothpick and check that your muffins have been cooked all the way through before removing them from the oven.
Once they’re done baking, allow them to cool in the muffin pan for at least 5 minutes. Then remove them from the pan and let them continue to cool on a cooling rack.

Pumpkin Spice Muffins
These 5-Ingredient Pumpkin Spice Muffins are delicious, full of flavor, and super easy to make - the perfect treat to enjoy this Fall!
Ingredients
- - 1 Box of Spice Cake Mix
- - 15oz 100% Pumpkin Purée
- - 1 tbsp of Vanilla Extract
- - 1/2 Cup Almond Milk
- - 1 Cup of White Chocolate Chips
Instructions
- Pre-heat oven to 350 degrees F.
- In a large mixing bowl, combine the spice cake mix, pumpkin purée, vanilla extract, and almond milk and mix well.
- Add White Chocolate Chips to the mixture and fold in.
- Coat your muffin pan with non-stick spray (or use cupcake liners) and scoop batter into your muffin pan, filling the cups 3/4 of the way up.
- Bake for 25-28 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in muffin pan for at least 5 minutes and then transfer to wire rack to cool completely.
- Enjoy!
