Grits waffles?! Yup you read that right! This recipe is hands down one of the best, and probably most creative recipes that I’ve whipped up recently, and you know I wouldn’t share it unless it was absolutely delicious!

I’ve been on a savory breakfast kick lately, and I figured what better way to incorporate some spice into my breakfast regimen than with this Catfish and Grits Waffles recipe.

Catfish is perfect for breakfast since they have that consistently mild, yet subtly sweet flavor! Plus their flakey texture compliments the heartiness of the grits waffle perfectly!

Also, I know I said this in my Catfish Egg Roll recipe, but I realllly believe that THIS is the best recipe yet!

Without further ado, here’s everything you need to make this Catfish & Grits Waffles with Cajun Honey Butter:

  • U.S. Farm-Raised Catfish Filets
  • Cornmeal
  • Flour
  • Eggs
  • Cooked Grits
  • Shredded Cheddar Cheese
  • Honey
  • Milk
  • Melted Butter
  • Bakin Powder
  • Cajun Seasoning
  • Salt & Pepper to taste
  • Smoked Paprika
  • Chopped Green Onion

How to make the U.S. Farm-Raised Catfish:

First things first, to ensure that you are getting the safest, highest quality catfish, be sure to look for the U.S. Farmed Raised seal when shopping!

In a large bowl, combine cornmeal, flour, and cajun seasoning and whisk together. In a separate bowl, beat one egg and set aside. Take your catfish filets and cut them in half crosswise using a paper towel to remove any extra moisture.Then dip each filet in the beaten egg and then generously coat in the cornmeal mixture.

Next, in a large skillet, heat oil over medium/high heat, and once ready, fry the catfish filets until they have that classic golden brown color and crispy texture that we all know and love!

Remove from the oil and place the cooked catfish on a paper towel lined plate to absorb any extra grease.

How to make the Grits Waffles:

In a mixing bowl, combine your cooked grits, eggs, milk, and butter until well combined. In a separate bowl combine flour and baking powder and whisk together until well mixed.

If you are one of those people like my husband, who for some strange reason prefers sweeter grits, feel free to add a few tablespoons of granulated sugar to your dry ingredients for a sweeter grits waffle.

Add your dry ingredients to the grits mixture and mix together until well combined. Next, heat your waffle iron and spray with non-stick spray to prevent the batter from sticking to the griddle.

Add about 1/2 cup of the batter to your griddle and cook until the waffles are fluffy and golden brown.

Now that your Catfish filets and Grits Waffles are prepared, the final step is to whip up the easiest Cajun Honey Butter to go on top.

How to make the Cajun Honey Butter:

In a small saucepan, add in butter and cook on low/med heat until melted. Next add in honey, cajun seasoning, and a pinch of paprika for extra smokiness (optional). Mix together thoroughly until the honey and butter are well combined.

Now that each of the elements of this yummy meal have been prepared, simply plate the perfectly cooked U.S. Farm-Raised Catfish on top of 1-2 waffles and drizzle a bit of the cajun honey butter on top. 

I also highly recommend having a bit of the cajun honey butter on the side for dipping!

Storage and Reheating Instructions:

To store the catfish & the grits waffles, allow both the catfish and waffles to cool completely. This will cut down on condensation and moisture when storing. Store the catfish and waffles in two separate, air-tight containers. You could also opt to wrap the waffles and catfish separately in foil and store them in plastic bags. Store in the fridge for up to 3 days to maintain optimal freshness.

To reheat the catfish and the grits waffles, preheat the oven to 350°F. Place the waffles and catfish on a baking sheet lined with parchment paper. Heat for 10-12 minutes or until the waffles are warmed through.

For a faster reheating process and a crispier result:

Place the waffles in the toaster for 1-2 minutes and reheat the catfish in the air fryer at 350°F for 5-7 minutes.

PRO-TIP

Try to avoid the microwave for reheating if possible. It can make the waffles soggy and cause the catfish to lose its crispiness!

Ingredients

For the Catfish:

  • 2 U.S. Farm Raised Catfish
  • 1 cup cornmeal
  • 1/2 cup flour
  • 1 tbsp Cajun seasoning
  • Oil for frying (about 4-6 cups)

For the Grits Waffles:

  • 2 cups cooked grits
  • 1/4 cup shredded cheddar cheese
  • 2 eggs
  • 3/4 cup milk
  • 2 tbsp melted butter
  • 1 1/2 cup flour
  • 1 tsp baking powder
  • Salt & Pepper to taste
  • Non-stick spray (for waffle iron)

For the Cajun Honey Butter:

  • 1/3 cup unsalted butter, softened
  • 1/4 cup honey
  • 1 tsp Cajun seasoning (adjust for heat preference)
  • 1/4 tsp smoked paprika (optional for extra smokiness)
  • Pinch of salt (optional, if using unsalted butter)

Instructions

To prepare the U.S. Farm-Raised Catfish:

  1. Combine cornmeal, flour, and cajun seasoning in a large bowl and whisk together.
  2. In a separate bowl, beat one egg and set aside.
  3. Cut the catfish filets in half using a paper towel to remove any extra moisture.

  1. In a mixing bowl, combine cooked grits, cheese, eggs, milk, and melted butter until well combined.
  2. In a separate bowl combine flour and baking powder and whisk together until well mixed. Add 1-2 tbsp of granulated sugar to your dry ingredients for a sweeter grits waffle.
  3. Add the dry ingredients to the grits mixture and mix until well combined.
  4. Heat your waffle iron and spray with non-stick spray to prevent the batter from sticking to the griddle.
  5. Add about 1/2 cup of the batter to your griddle and cook until the waffles are fluffy and golden brown.

To prepare the Cajun Honey Butter:

  1. In a small sauce pan, add in butter and cook on low/med heat until melted.
  2. Once melted, add in honey, cajun seasoning, and a pinch of paprika (optional).
  3. Mix thoroughly until the honey and butter are well combined.
