Do you remember when the ‘crack chicken’ recipe was trending all over the internet? I know my hubby and I loved making it and using it for sandwiches, and wraps – it’s even pretty good on salad!

It’s been a while since we’ve had it but my hubby requested it this week and I decided to add a little twist to it and make this slow cooker crack chicken cajun style!

While I’m not a huge fan of overly spicy food, this crack chicken has the classic flavor we loved with just a hint of spice! I’d argue that it’s the perfect way to elevate this easy, versatile dish!

Plus, you always have the freedom to make it as spicy or as mild as you’d like. However, if you have kiddos who enjoy crack chicken, I’d recommend sticking to the original recipe to be on the safe side.

I also realized that I haven’t shared too many slow cooker recipes here on the blog so I’m excited to share more of them with you guys. In the meantime, you should totally check out this slow cooker pot roast. This one is so good that it managed to make it on the blog a little while ago.

Since then I was blessed with a brand new crockpot from my hubby so it’s only right that I bring y’all all of the slow cooker goodness that I whip up!

This cajun-style slow cooker crack chicken is made with only 8 ingredients (I know, I know, not quite a 5-ingredients or less recipe bummer), and is super easy to whip up making it perfect for those busy weeks when you need something you can dump in the crock pot, set, and forget!

Here’s what you need to make this Slow Cooker Crack Chicken (Cajun Style): 

  • Boneless, Skinless Chicken Breast
  • Coked Bacon
  • Cream Cheese
  • Chicken Broth
  • Butter
  • Green Onion
  • Ranch Seasoning
  • Cajun Seasoning

Preparing the Slow Cooker Crack Chicken

Once you have all of your ingredients, be sure to make your cleanup easier by utilizing a crock pot liner! I remember when I wasn’t even aware that crock pot liners were a thing and man, the clean-up after was so time-consuming!

To start, add your chicken breasts to the bottom of your crockpot. Next, pour the chicken broth on top.

Combine the ranch and cajun seasonings and sprinkle over your chicken breasts until they are covered.

Next, take your cream cheese and butter and cut them into squares. Place them evenly on top of the seasoned chicken.

Once the cream cheese and butter have been added, pop the top on your slow cooker, and cook low and slow for 6 hours.

Once the chicken has finished cooking, carefully remove it from the crockpot, and shred it. Once shredded, place it back inside of the crock pot and stir in with the cream cheese until well mixed.

Next add in the shredded cheese, bacon, and green onion. Stir in until mixed well.

While the crockpot is set to ‘warm’, add the rest of the shredded cheese on top of the crack chicken until it melts. Garnish with additional green onion and enjoy!

Storage and Reheating Instructions:

Although crack chicken is best when enjoyed immediately after preparing, when stored properly it easily maintains its flavor and texture.

To store in the fridge:

  • Once cooled, I recommend transferring the Crack Chicken to an air-tight container to maintain freshness. It can be stored in the refrigerator for up to 3-4 days (if it lasts that long).

To store in the freezer:

  • Place the cooled Crack Chicken into either a freezer-safe, airtight container or a heavy-duty freezer bag. It can be stored in the freezer for up to 2-3 months. Be sure to thaw in the refrigerator overnight before reheating (reheating instructions below).

The best part about crack chicken is that it reheats extremely well and makes for a yummy lunch (or dinner) the next day!

To reheat in microwave:

  • Place the crack chicken on a microwave-safe plate/bowl and reheat until it is at your desired temperature. Depending on your microwave, this can take anywhere from 1-2:30mins. Be sure to stop and stir frequently. You may even need to add in a splash of chicken broth or water to maintain the creamy consistency

To reheat on the stovetop(recommended):

  • Place the crack chicken in a small pot on medium heat. Depending on the serving size, add in 2-3 tablespoons of water or broth to bring back its creamy texture. Be sure to stir frequently until you reach your desired temperature.

Ingredients

  • 8 slices of Cooked Bacon
  • 12 oz Cream Cheese (cubed)
  • 2 Cups Cheddar Cheese
  • 2 tbsp Ranch Seasoning
  • 3 tsp Cajun Seasoning
  • 3/4 cup Chicken Broth
  • 3-4 Boneless, Skinless Chicken Breasts
  • 4 tbsp Butter
  • 1/2 cup Green Onion

Instructions

  1. Line your slow cooker with a liner and add your chicken breasts to the bottom.
  2. Pour the chicken broth evenly on top of the chicken.
  3. Combine the ranch and cajun seasonings and sprinkle over your chicken breasts until they are fully covered.
  4. Take your cream cheese and butter and place them evenly on top of the seasoned chicken.
  5. Once the cream cheese and butter have been added, place the top on and cook on low for 6 hours.
  6. Once the chicken has finished cooking, carefully remove it from the crockpot, and shred it.
  7. Once shredded, place it back inside of the crock pot and stir in with the cream cheese until well mixed.
  8. Next add 1 cup of shredded cheese, along with the bacon, and green onion. Stir in until mixed well.
  9. While the crockpot is set to 'warm', add the rest of the shredded cheese on top of the crack chicken mixture until it melts.
  10. Garnish with additional green onion.
  11. Enjoy!
