Growing up, Sunday dinner was probably the most anticipated dinner of the week! You knew that you were going to have something hot, hearty, and delicious! I have to admit that I’ve kind of dropped the ball on this with my own family. I’m usually about easy, low-effort, and delicious dinners that I can make in minutes.

However, I started to miss those cozy home-cooked Sunday dinners and I also wanted my kids to enjoy them on a more consistent basis.

That said, I still needed it to fit my paremeters of delicious, easy, and low-effort and this slow cooker smothered chicken checks all of the boxes.

If you don’t count all the individual seasonings, this could easily qualify as one of my 5 ingredients or less recipes, but it’s still super simple to whip up and full of flavor – which is always a win in my book!

Here’s what you need to make this Slow Cooker Smothered Chicken:

  • Your favorite Chicken (I used this pack of Drumsticks, Wings, & Thighs)
  • Frozen Pepper and Onions (You can also opt for fresh)
  • Chicken Broth
  • Garlic Paste
  • Seasonings (salt, pepper, paprika, red pepper flakes, onion powder, garlic powder)
  • Cream of Chicken

Preparing the Chicken

Before adding the chicken to the slow cooker, coat the chicken with a bit of olive oil and cover with the seasonings ensuring that each piece of chicken is well coated.

Add a bit of olive oil to a skillet over medium heat and cook the chicken until it is golden brown on the outside. There is no need to cook them all the way through since they will finish cooking inside of the slow cooker.

PRO-TIP

Season and brown the chicken in a skillet before adding it to the slow cooker for more flavor!

I love using the drumsticks, wings, and thighs pack from Walmart. The kids love drumsticks and hubby, and I enjoy the wings and thighs. There are usually about 12 pieces of chicken in each pack, so it also makes for a nice amount of leftovers for lunch the next day.

You can also choose to use all legs or even chicken breast. Any cut of chicken will do!

Preparing to Slow Cook the Chicken

Once all of your chicken has been browned, add them to a lined slow cooker – yes lined (just trust me on this).

To prepare to slow cook the chicken, pour the chicken broth evenly over the chicken, add the frozen (or freshly chopped) bell peppers and onions, garlic paste.

Using frozen peppers and onions cuts down a ton on prep time but you can also chop up fresh peppers and onions for this recipe. You can even do it the night before so that you can just toss this entire meal in the slow cooker on a Sunday morning before church!

Finally pour the cream of chicken soup on top making sure to cover everything as evenly as possible.

Cover and cook on low for 6 hours or on high for 4.5 hours.

Once done, serve over a bed of rice or these cheesy garlic mashed potatoes and with your favorite side!

Storage and Reheating Instructions:

Although this dish is best enjoyed right after cooking, it is just as delicious when stored and reheated as leftovers the next day.

To store in the fridge:

  • Turn the slow cooker off to allow the chicken to cool completely before transferring them, along with the peppers, onions, and gravy into an air-tight container. They can be stored in the refrigerator for 2-3 days.

To store in the freezer:

  • Turn the slow cooker off to allow the chicken to cool completely before transferring them, along with the peppers, onions, and gravy into a freezer-safe bag or container. If using a freezer bag. Remove as much air as possible and freeze for up to two months.

This smothered chicken reheats extremely well in the microwave and comes in handy for a quick lunch. Warm up some minute rice, and you have a complete meal!

To reheat in the microwave:

  • Place your desired serving of chicken in the microwave and reheat for about 45 seconds to 1 minute, depending on your serving size. Continue to reheat until it is at your desired temperature.
  • If reheating from frozen, allow the chicken to thaw in the fridge overnight before reheating.

Ingredients

  • 5lbs (1 Pack) Chicken Thighs/Legs/Wings
  • 1 Bag (1lb) - Frozen Onions and Peppers
  • 2 cans - Cream of Chicken
  • 1 cup - Chicken Broth
  • 1tsp - Salt
  • 1/4 tsp - Pepper
  • 1/2 tsp Paprika
  • 1/4 tsp - Red Pepper Flakes
  • 1/2 tsp - Onion Powder
  • 1/2 tsp - Garlic Powder
  • 1 tbsp - Garlic Paste
  • 2 tbsp - Olive Oil (for browning)

Instructions

  1. Coat the chicken with 1 tbsp of olive oil and cover the chicken with the seasonings (salt, pepper, paprika, red pepper flakes, onion powder, & garlic powder) ensuring that each piece of chicken is well coated.
  2. Add the remaining olive oil to a skillet over medium heat and cook the chicken until it is golden brown on the outside. There is no need to cook them all the way through since they will finish cooking inside of the slow cooker.
  3. Add the browned chicken to the slow cooker.
  4. Pour the chicken broth evenly over the chicken.
  5. Add the frozen (or freshly chopped) bell peppers and onions, and garlic paste to the slow cooker.
  6. Pour the cream of chicken soup on top, covering everything as evenly as possible.
  7. Cover and cook on low for 6 hours or on high for 4.5 hours.
  8. Once done, serve with your favorite sides and enjoy!
