While I’m sure there are many things that you’re really going to want to put on your Christmas list this year. These Mini Cranberry-Orange Muffins should definitely be one of them! Made with dried cranberries, orange juice, and Butter, they are easy to make, festive, and delicious!

I’m all about a quick and easy holiday treat and these muffins are sweet, delicious, and perfect for the holidays! They’re mini! Speaking of mini, be sure to check out my Mini Pecan Pies are a family favorite and will be a hit at your next holiday gathering!

Here’s what you need to make these Mini Orange-Cranberry Muffins:

Non-Stick Spray

1 tsp Baking Powder

1 cup Cranberries

2 Eggs

1 cup of Flour

¼ cup Half & Half

¼ tsp Nutmeg

⅓ cup Orange Juice

2 tbsp of Plugra Butter (softened)

½ cup Sugar

1 tbsp Vanilla Extract

Making these muffins are a breeze and I love whipping them up on those cold December mornings before my boys go to school. Simply combine your sugar, butter, vanilla, eggs, and half-and-half and mix well.

Once mixed, add in the dry ingredients and combine.

Spray a mini muffin pan with a nonstick spray and spoon the batter into the muffin pan.

Bake your muffins for 12-15 minutes or until golden brown.

Such an easy, yummy festive treat to have in the morning (or throughout the day). I must warn you though, once your eat one, it’ll be hard not to have another!

Mini Orange-Cranberry Muffins that you can enjoy right away or you can pop them in an airtight container and store them in the fridge until you are ready to indulge.

Trust me, you won’t regret it – especially if you’re a busy mom like me who’s always looking for new ways to make and enjoy traditional holiday recipes.

Ingredients

  • Non-Stick Spray
  • 1 tsp Baking Powder
  • 1 cup Cranberries
  • 2 Eggs
  • 1 cup of Flour
  • ¼ cup Half & Half
  • ¼ tsp Nutmeg
  • ⅓ cup Orange Juice
  • 2 tbsp of Plugra Butter (softened)
  • ½ cup Sugar
  • 1 tbsp Vanilla Extract

Instructions

    1. Preheat your oven to 375 degrees Fahrenheit
    2. Using a large bowl, combine sugar, butter, vanilla, eggs, orange juice, and half and half and mix well.
    3. Add in flour, nutmeg, baking powder, and mix well.
    4. Add in cranberries and fold into the batter.
    5. Spray a mini muffin pan with nonstick spray and spoon the batter into the muffin pan.
    6. Bake for 12 to 15mins or until golden brown.
    7. Let muffins cool 5-10mins before removing them from the muffin tin.
    8. Enjoy!

  1. At what point do I add in the cranberries and orange juice. You’ve left them out of the recipe instructions.
